Warm Brussels Sprout Salad

Good Morning and Happy February! I hope everyone enjoyed the Super Bowl yesterday- and filled up on all the football foods!

For my recipe, I’m sharing this Warm Brussels Sprouts salad. This one is a fan favorite in our home- it gets even Phil to eat his greens! It’s SO simple to whip up on a weeknight, and is equal parts tasty and nutritious. We love to add crispy bacon to the mix, but you could just as easily skip this part- or add some pancetta if you want to get extra fancy. We always have hard boiled eggs on hand- make them at the beginning of the week to add to salads or grab as a snack on-the-go {check out my never-fail technique for hardboiled eggs here}.

Warm Brussels Sprout Salad

Ingredients:

  • 1 large package shaved Brussels sprouts
  • 4 Shallots, sliced
  • 4 slices Bacon
  • 4 Hard Boiled Eggs, quartered
  • Salt & Pepper
  • Olive Oil
  • Rice Wine Vinegar
  • Balsamic Drizzle

Instructions:

  1. Cook Bacon, Set aside

  2. Slice shallots and sauté in olive oil until translucent

  3. Add shaved Brussels sprouts to the shallots and cook until desired doneness. Some prefer soft; others prefer a more al dente sprout. Approx dd minutes.

  4. Add salt and pepper to taste

  5. Transfer Brussels sprouts and shallots to a large bowl

  6. Add crumbled bacon and toss with 1/4 cup rice wine vinegar

  7. Top with eggs

  8. Drizzle with Balsamic

  9. Serve and enjoy!
