Cajun Cod Tacos
Taco Wednesdays are a thing right? Two recipe posts in one day, because ‘tis the season to eat all the things.
Sitka Salmon Shares sent me a package this week of premium, sustainable wild-caught Alaskan seafood- delicious salmon and cod sent straight to my doorstep from the fishermen that caught it. I thawed one package of their cod yesterday, and whipped up some cajun cod tacos tonight. Not only were they SUPER easy, but they were tasty, too. All the ingredients I used were on-hand. Had I ventured to the store, I might have picked up some cilantro for garnish, and maybe an avocado or two. But for all of you asking, here are tonight’s Cajun Cod Tacos.

Cajun Cod Tacos
Ingredients:
- Soft Tortillas- I used Siete Foods Cassava Flour Tortillas
- 2 Limes
- Cod Filet
- Shredded Lettuce
- 1 Can Black Beans
- Sour Cream
- 1 Yellow Bell Pepper, sliced
- Pico de Gallo or Salsa
- 2 Tablespoon Butter
- Olive Oil
- Cajun Seasoning
Instructions:
- Cut cod into cubes and season liberally with cajun seasoning
- If thawed, maked sure fish is pat dry with a paper towel
- Heat butter in a skillet over high heat; when butter starts to brown, add cod
- Cook fish until cooked through and blackened, roughly 5-7 minutes; stir occasionally
- While cod is cooking, heat black beans and sauté bell pepper in olive oil and cajun seasoning
- Heat tortillas over medium heat
- Divide ingredients and layer on warm tortillas as desired
- Top with sour cream and salsa and a squirt of fresh lime
