Boursin Stuffed Chicken

Typically, I don’t publish blog posts on Monday nights. But it’s been so long since I’ve made a home cooked meal; and the occasion had to be documented. Growing up, my mom cooked nearly every single night- gourmet meals for her family of six. And while I didn’t necessarily inherit her skill- or desire- to cook on such a level, I did get a few very simple, delicious family-friendly recipes from her.

This Boursin Stuffed Chicken Breast was one of her go-to’s- one that is so yummy yet super easy to make. And one that is always a crowd pleaser for my own family these days.

Boursin Stuffed Chicken

  • cook time: 40 minutes

Servings: 4

Ingredients:

  • 4 bone-in chicken breasts

  • 1 package Boursin Garlic & Fine Herbs Cheese

  • Basil

  • Salt & Pepper

  • Olive Oil

Instructions:

  1. Preheat oven to 375 degrees
  2. Divide cheese into roughly four even slices, set aside
  3. Coat chicken breasts in olive oil
  4. Gently lift skin and stuff with one slice of cheese and 2 basil leaves
  5. Salt and pepper outside of chicken generously
  6. Bake at 375 degrees for roughly 40 minutes until just cooked through
