Banana Pancakes

Rain, rain, go away! Has anyone else been cooped up inside the past few days? We certainly have. And we are just about running out of books and puzzles and Netflix to keep us occupied. So what else do we do on these bored and gloomy winter days inside? Why, head to the kitchen, of course. 

And while boredom solved in the kitchen {most} often leads to a big batch of cookies or brownies or cakes, as well as the demise of my diet,  I've been doing my best to stay on that nutritious-new-year-track. I found this recipe for Banana Pancakes on one of my favorite healthy eating sites, All Good Eatsand have been hooked ever since.

They're super easy to make, with just a few simple ingredients. Six to be exact: bananas, eggs, vanilla, cinnamon, nutmeg and almond flour. And they're deliciously filling with just the right amount of sweet. Although, admittedly, I'm a little heavy handed when it comes to the vanilla. I've been topping mine with whatever fruit we have on hand, but you can add your favorite nuts or coconut flakes. A big dollop of whipped cream would probably do the trick too, although I'm not sure that would be All Good Eats approved.
