Over The Rainbow

Happy St. Patrick's Day! And what better way to celebrate than with some colorful baked goods?

St. Paddy's is a holiday we generally skip, being as that we are no longer the Guinness-all-day kind of people, nor are we Irish...

But this year we will be celebrating, albeit a few days late. This weekend MM will attend her first St. Patrick's Day party and parade- an afternoon spent with some friends and their kiddos, an obligatory Guinness or two for the grown ups, and of course some yummy eats- giving me the perfect excuse to whip up these rainbow + gold goodies. 

I took the easy way out and used my favorite box of cupcake mix- in this case Pillsbury Super Moist Golden Butter Recipe- but feel free to top your go-to cake recipe!

How To Decorate

After cupcakes were baked and cool, I topped them with Pillsbury Funfetti Blue icing. I then piped three dots of white icing for the clouds, connecting them with a piece of Airheads Extreme Rainbow Sour Belts. For the pot of gold I used a rolo, topped with a dot of icing and dipped in coarse sugar.
